Start with side lights open the doors will reveal some screws then head lights rest will follow .

I think this is the fastener you need to remove to get the cover plate out of the way so you can access the side lights. The youtube video doesn't show removal of that plate:

my headlight set up is entirely different from the one in the video also. I dont have a separate orange signal casing

Interesting, so you're saying that plate is welded on or it is a part of the body and is non-removable? I would find the model number of your van and go dig through the parts diagrams on a site like JP-carparts.com to see if you can suss out how it needs to be done.
For example my van is LH107W-MFPQS. I think you can see this on the VIN plate on the passenger side by the engine bay, under the carpet. Look that up on the parts site and then look at the diagrams for the bumper and side lights. It looked to me (though I might have been looking at the wrong model) that you might have to partially remove the bumper to get at the screw the holds the side light to the body. That sounds a bit crazy for just changing a headlight bulb, so hope I am reading the diagrams incorrectly!

It does look indeed like the plate is welded on.
But then i dont understand why the one screw and the fastener would exsist. Reardless i cant get to the other side of the fastner :/

So there are fasteners on that plate that you can remove, even though the plate itself is fixed? Perhaps you just have to undo the fasteners on your side, and then you can pop the side light out? Would need to see a closer photo of that 'plate' area to better understand what you are working with.

I cant see anyway to remove the fastner. My thinking is they hold something on the inside to that plate rather than holding the plate onto something. The plate 100% seems welded on. Even with one fastner at the top there would be a micro amount of movement , but thres nothing
