I have a 1991 vehicle which has been in the UK since 2005.  Currently I get about 2 days use from the leisure battery which works fine as we don't spend long in one place However we are planning a longer trip abroad over the summer and want the option of hooking up to a mains either here in the UK or on the continent.  What is the best way of converting my mains hookup from the Japanese connection/voltage to one that will work over here?

Best approach is to replace the 110V system with a UK hookup, including a 240 to 12V adapter. The alternative is to just do the mains side and use a 240V to 120V transformer to drive the existing charger/adapter. That's probably slightly cheaper, especially if you can find a transformer cheaply. I guess you could have my old one if you want- where are you based?
You can get a hookup kit from Just Kampers (specialise in old VWs).
You may be able to re-use the wiring in the van but it depends whether it's rated for UK mains and I'm not sure how you could tell!
What do you have in place at the moment?
