Hello “classic-333” and welcome to the forum!
The best online resources in lieu of a manual are on the Hiacesoutheast web page. There’s loads there including fluids and capacities. The engine oil change interval is 5000 km, which is not a lot.
Hiaces take a lot of fluids and I’d always recommend bulk purchasing where possible. I think the best online oil seller (UK) is Westway Oils though Smith and Allan are a little cheaper. Over the years both have been very helpful to me and a lot cheaper than high street shops (20L of engine oil is ~£80 and enough for 3 changes).
You’re also much more likely to change at the right interval if you already have the stuff. All the oily bits on mine have the same 24mm fill and drain holes and crush washers, which are available individually or in packs of 10 from Toyota. Again, cheaper and handier to have spares; a full oils swap will use all ten on a manual with 4WD.

Btw the correct grade for the 3L is temp dependent as follows (info from manual):
-18C up 10W30, -12C up 15W40, -7C up 20W50 of type API CF-4. The oil you choose ought to reflect this.
Capacity is dry = 7.2L, drain + filter = 6.5L, drain without filter = 5.7L.

Careful with identifying engines. The 3L is not the 3 litre. The 3L is the non-turbo 2.8 litre The 1KZ-TE is the turbo 3 litre
Also worth noting that oil technology has improved immensely since the 90’s when the owner and workshop manuals were written. If you’re in a cold climate, the extended spread of grade that semi & full synthetics offer these days means you can get far better cold-start protection while still maintaining target viscosity at operating temp.
One thing the 1KZ engines seem to do when running mineral grade like 15w-40 is that once the oil starts to break down and is due for change it starts to lose the viscosity at cold start and the engine becomes noticeably harder to start/turnover. From my experience they do seem to run noisier at idle on full synthetics. Especially cold. The 1KZ has a very particular idle “rattle”.

Also check the plate under the passenger seat, IIRC the grade required is written there!

I use Shell Rotella T6 5W40 and Toyota Filter 90915-30002.
For those 1KZ-TE within the U.S., I have found it's easier to find it at your local DIY store Home Depot.
Always remember to pour in less then required with/without filter change and run to circulate to avoid over filling.
